Eggs 

 

 

 

 

 

 

 

Shakshuka (Kate Williams) 

 

Oil

A small can of diced tomatoes (or a few fresh ones)

Half an onion, diced

A few cloves of garlic

A bell pepper (I know these can get expensive so honestly, you can substitute with any veggie, like, eggplant or  squash are nice)

Generous SMOKED paprika (about  1.5-2 teaspoons). (not optional lol)

About 1/2 teaspoon of both turmeric and cumin, optional if you don't have it but much better with it

Eggs (optional! but recommended unless you wanna use tofu scramble instead)

 

Sautée the onion and garlic

Add the bell pepper/veggies for a couple minutes

Add the diced tomatoes

Pop in the spices and simmer on medium heat until the tomatoes start to break down--around 8ish mins

Crack the eggs on top of the mixture, cover, reduce heat to low/medium low, then simmer until the eggs are cooked to your liking. 

 

I like to eat this with toast or on top of rice :) Overall it probably takes me 25ish minutes.

 

Spanish Tortilla (or Andean?) (Ana María) 

 

2 potatoes 

5 eggs 

Oil 

Salt 

Pepper 

 

Peel the potatoes (you don’t have to though) 

Cut them in quarters and then slice the quarters 

Heat up a skillet with generous oil (you’ll cook the potato slices in the oil) 

Fry the potatoes until soft and a bit golden 

Scramble the eggs and add salt and pepper to taste 

Add more oil (if needed) so that the egg won’t stick to the pan 

Distribute potatoes evenly over skillet and then add the eggs to it 

Cover with a lid and cook at medium to low heat so bottom doesn’t burn and stick to the pan 

Wait until the egg at the top is solid 

Use a flat lid with no edges or a plate to flip the tortilla → you might want to use a spatula to separate the bottom a little bit first 

Flip the tortilla onto the plate or lid, transfer it to the skillet again and cook the other side for about 5 min it’s golden and crispy 

This gives four generous portions! 

 

You can use this same concept and instead of potatoes use whatever veggies you have in the fridge!

 

 

Eggs in tomato sauce 

 

2 eggs per person 

Tomato sauce (canned or you can make from scratch) 

Thyme or oregano (optional)

Parsley or cilantro 

Cheese 

 

Heat up the tomato sauce in a pan

Add thyme or oregano 

When boiling, crack the eggs in the sauce 

Cook the eggs in the sauce (5-10 min depending on how high the heat it) 

Add some parsley or cilantro and cheese on top and let the cheese melt a little bit 

Serve with corn tortillas or rice! 

 

One Pan Meal--Veggies and Eggs

 

Any veggies you may have in the fridge:

Onions

Zucchini 

Tomato

Mushrooms

Cabbage

Potatoes

Etc.

In a pan, sautée some veggies. I start with onions and then add whatever else I have. Sometimes I add a little water if I’m using a harder vegetable like potatoes. When this is nearly done, I make four holes in the veggies (clearing the veggies to make free spots in the pan) and crack the eggs directly into the spaces. Put a lid on this and cook for a few minutes, depending on how you ike your eggs. The eggs have a poached kind of feel. Add hot sauce or grated cheese on top!

 

This is my go to meal. Super healthy, can be made for many people or few, and it’s super tasty.

Fried eggs on toast. Or cut a hole in the middle and fry the egg in the toast in a pan. Homefries on the side? Chop a potato into cubes, boil for several minutes, and then fry in a pan until golden brown.
